Lemon Ricotta Pancakes
Lighter and tangier than a standard stack — the ricotta keeps them tender and the whipped whites keep them airy.
Method
- Whisk the ricotta, egg yolks, milk, lemon zest and juice until smooth.
- In another bowl, whisk the flour, sugar, baking powder and salt, then fold into the ricotta mixture until just combined.
- Beat the egg whites to soft peaks — they should hold a shape but still slump at the tip.
- Fold the whites into the batter in two additions, stopping while a few streaks remain. Overmixing here costs you the lift.
- Cook on a buttered pan over medium-low, 1/4 cup at a time, about 3 minutes until the edges set, then flip for 2 minutes more.
- Serve with berries or a spoonful of honey.
Cook's notes
- Medium-low, not medium — these are thicker and will scorch before the middle sets on high heat.
- Drain watery ricotta in a sieve for 15 minutes or the batter will be loose.
- The batter doesn't keep once the whites are in. Cook it straight away.

Why this works
Ricotta adds moisture and fat without adding gluten, so the crumb stays tender. The whipped whites are folded in last because they're doing the lifting — mixing them properly in would knock out the air that makes these lighter than a standard pancake.
If it goes wrong
Dense results mean the whites were over-folded or beaten past soft peaks. Wet centres mean the heat was too high; these are thicker than standard pancakes and need medium-low and more time.
Make it your own
Orange or grapefruit zest in place of lemon. Blueberries pair well. A spoonful of poppy seeds gives a lemon-poppyseed version that's excellent with honey rather than syrup.
Storing and reheating
Best fresh — the airy structure collapses on cooling. If you must, refrigerate 2 days and reheat in a dry pan rather than a microwave.
