Greek Yogurt Berry Parfait
Creamy, tangy, and ready in five minutes. Layered yogurt, berries and crunchy granola — high protein, no cooking.
Ingredients
- 1 cup (240g) Greek yogurt
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla
- 1/2 cup mixed berries
- 1/3 cup granola
- Optional: chia seeds, sliced almonds
Method
- Stir the honey and vanilla into the yogurt.
- Spoon a third of the yogurt into a glass.
- Add a layer of berries and a sprinkle of granola.
- Repeat the layers, finishing with berries and granola on top so it stays crunchy.
Cook's notes
- Add the granola just before eating so it stays crisp.
- Use frozen berries (thawed) in winter — the juices make a nice sauce.
- Layer in a jar the night before (granola packed separately) for grab-and-go.
